Imagine what magic could happen when a bright young college graduate armed with a degree in mathematics and computer science, teams up with a top engineering graduate. The result, in this case, is more amazing than one might imagine. The product of this high-tech partnership is one of Sacramento's most imaginative and enjoyable Japanese restaurants - Nishiki Sushi.

Danny Leung (math and science whiz) and Joe Jang (engineering guru) had much more than their educational credentials in common when they launched the restaurant in 2001. Danny says they were inspired by the new desire for very fresh and healthful food that went beyond traditional Japanese cuisine.

They had previously been partners in one of the region's most successful and familiar family-owned eateries - three Cornerstone Restaurants that, in the past, have won popular votes for being Sacramento's "best" place to have breakfast. The pair also recently launched the Stonegrill and Bar - yet another new concept in dining.

"Dining is about more than eating food," says Danny. "It can be an entire experience that engages all the senses." Thus, Nishiki Sushi adds variety and creativity to all its dishes. Yes, you can still order traditional tempura and simple sushi rolls, but you can also choose from dozens of imaginative rolls that marry fresh, interesting ingredients like snow crab, avocado, seared tuna, special sauces and other delights. The presentation of the dishes requires artistry from Nishiki's expert sushi chefs and is applauded by enthusiastic diners.

The partners were also eager to bring yet another element to the Nishiki dining experience - fun. "This is a very relaxed and enjoyable atmosphere," says Danny Leung. "We encourage laughter and conversation. Our entire team is dedicated to delivering excellent food, yes, but we also have fun doing it!"

The partners have been very pleased with how Nishiki Sushi has become a standard for Japanese dining in the capital city - "Regulars" come from miles around to relax, savor and enjoy. Danny and Joe invite you to visit Nishiki and become part of the "family."

Although there are dozens of imaginative sushi, nigiri and sashimi selections on the menu, Nishiki chefs welcome the opportunity to build an entirely new combination, should a request be made. This, Norman explains, is just one of many things that make the restaurant a unique and enjoyable experience. Another, he is quick to add, is Nishiki’s signature libation - the Sake Bomb, featured at a special price on Monday nights.

But, central to Nishiki's success is its appeal to a wide range of tastes. There are traditional offerings such as Tempura, Teriyaki and Sukiyaki alongside exotic rolls such as the Damino Roll - a dramatic presentation of lobster, snow crab, salmon and other ingredients embellished with three special sauces.

Larger gatherings of people enjoy ordering one of Nishiki's Gourmet Boats – floating with delicious sashimi, nigiri and makimoto selections that delight the eyes as well as the appetite. Of course, many guests like the tasteful variety of ordering meals "family style," allowing everyone to sample several different dishes.

But, within all this variety there is one common thread - fresh ingredients, thoughtfully prepared. Nishiki Sushi even features a large fish tank with seasonal selections such as oysters, clams, scallops, lobster, shrimp and whole fish. From salt water to serving plate, that's freshness at its finest!

Nishiki Sushi also hosts and caters parties and events, and enjoys a very healthy take-out business. All the options and activity keep the restaurant's staff, chefs and management in motion. This is exactly the way that Norman and the owners want Nishiki Sushi to be –fresh, lively and creative. "They say that variety is the spice of life," Norman says with a smile.
